The quality of the seabed found in Cabras is known to be in pristine conditions making this a prime spot for mullets to feast on. As a result of such conditions their meat is unanimously considered the best quality ever to be found. The roe obtained from the mullets (known as bottarga) is another local delicacy that cannot be missed and hence referred to as the gold of Cabras (Oro di Cabras). September marks the season when plump mullets swarm in by the thousands into the waters of the Cabras ponds, running into fishermen's nets, thus beginning the processing season. L'Oro di Cabras has been operating in this sector for several generations and guarantees a product of absolute quality.
